Key responsibilities

Staff and Team Performance

  • To take full responsibility for resourcing and managing all aspects of the Knai Bang Chatt beach front business to ensure there is a motivated and skilled workforce and all direct reports fully understand their roles
  • Ensure there is consistent, regular resource planning to meet the needs of the business
  • Establish & maintain lines of control and delegate responsibilities as appropriate
  • Lead and manage restaurant staff, through the establishment of high ethical and professional standards, goal setting, coaching and developing, and performance reviews.
  • Work closely with the Staff in training staff on excellence in customer service and operations issues.
  • Motivate and inspire team members to achieve outstanding results.
  • Practice a policy of equal opportunity employment.
  • Generally, make the beachfront restaurant and bars a preferred employer for Service staff in the region of Kep.
  • Be the lead coach and advisor in dealing with performance and HR issues
  • Conform with company HR policies
  • Conducting daily pre shift meetings involving key points of service and kitchen updates
  • Attend daily OPS meetings to help contribute to Resort Team success
  • Perform Daily Kitchen and FOH Meetings to keep staff informed on day to day OPS

Reporting and Financial

  • Provide the F&B director with the requested and required daily, weekly and monthly reports
  • Ultimate responsibility for achieving sales and operating cost budgets for the business unit
  • A comprehensive understanding of POS systems and ability to teach and guide supervisors

Supplier relationship

  • Negotiate competitive pricing along with F&B director with suppliers in regards to all required inventory relevant to the service side of the restaurant & lounge
  • Ensure regular price checks with suppliers are conducted to match negotiated prices

Marketing and sales

  • Endeavour to achieve pre-established sales targets.
  • Ensuring our Sustainable practice has presence with staff/guests
  • Ensure that The beachfront Restaurant and bars are prominently visible to our guests and to locals and visitors of Kep and surrounding destinations
  • Lead the development of competitive specials and product offers for promotions and marketing initiatives.
  • Recognize new opportunities to grow revenue

Guest satisfaction

  • Lead the staff in delivering excellence service and memorable dining and drinking experiences to all customers
  • Assist Khmer service staff in the resolving of on the floor customer issues
  • Ensuring that tables throughout the day of service are touched by the Manager several times

Product development and product research

  • Become familiar with the food and beverage offerings of our competitors within the destination
  • Undergo competitor product and pricing analysis along with the DFB, where possible
  • Review, revise and refresh the The Sailing Club Restaurant beverage offering on a regular basis

Safety and risk

  • Ensure that Knai Bang Chatt & beach front outlets exposure to risk is minimized
  • Ensure that health and safety issues are given paramount attention
  • Assess and report on all external risks (e.g weather, destination overcrowding) etc and develop strategies to minimize exposure to those risks
  • Ensure the Emergency Response Plan is understood by all staff
  • Conduct regular training and awareness sessions to ensure all staff are prepared for emergencies
